Dinner! Japanese Noodles and White Fish

Yes, we did just fry up some plantains at 9:30 at night. Sprinkled with sugar and cinnamon, these are heavenly.

Tonight’s dinner: Spicy Chipotle chicken with Mexican corn salad

Today’s lunch: Mustard Marinate and Panko Crusted Baked Catfish with asparagus and greens.

This is what we are having tonight. New Orleans Shrimp Sauté with okra and tomatoes over pasta and basil.

This ridiculously good salad is the special at Henry’s tonight: Pan Seared scallops with raspberries, blackberries, blue berries, goat cheese, tomatoes, candied walnuts and raspberry vinaigrette, atop mixed greens. Awesome.

Our Easter dinner: Roast Duck in molasses, Sriracha, honey and soy sauce with grilled veggies. Blog post tomorrow on thegingerkitchen.com.
